I love kale. Its super good for you, AND it can be really yummy in juices, breads, and pastas. I haven’t tried kale chips yet, but thats next. I’m doing my best to be as healthy as I can for my kids and soon to be husband (EEEEEKKK I love saying that) so, I’m trying to incorporate more veggies in our lives. Surprisingly, my boys love it. So, here is my new go-to recipe for lunch.
1/2 bunch of Kale
1/2 lb of linguine
1 clove garlic, finely minced (or a pinch of garlic powder)
1. Prepare pasta according to package directions. Drain
2. De-stem the kale. Just pull all of the leaves off, and save the stems for juice!
3. In a medium sauce pan, ad a drizzle of olive oil and the clove of garlic. Once the pan is heated, add the kale leaves to the pan. Heat the leaves until fully sautéed and wilty. That’s the technical cooking term ‘wilty’. (takes about 5 ish minutes)
4. Comine the pasta with the wilty kale. Add an extra tiny drizzle of olive oil if its super dry.
And there you have it! I usually top this with a sprinkle of grated parmesan because that makes it just delicious. A recipe this size will last me for about 2-3 days for lunch. Just reheat and you’re good to go!
