I like serving home cooked food to my family. Especially after reading all of the disgusting things that go into our fast food supply. It can be really disconcerting. The problem is that they don’t always want to eat the healthy foods, like veggies. So, I’m always looking for ways to create delicious foods that are good for you too. Especially snack foods, because typically the first thing that gets reached for when big brother gets home from school is fruit snacks or pretzels. So if I can sub that out for some good veggies, I feel accomplished. I looked in my fridge, saw some cauliflower about to go bad, and Googled recipes. Thus came popcorn cauliflower. I modified the recipe I found to fit the ingredients that I had in my house and it was a huge hit. Everyone loved it, including my mom, who hates cauliflower.
1 head of cauliflower
Step 1: Set the oven to 450. Line an edged cookie sheet with parchment paper. Break your cauliflower into pieces.
Step 2: Drizzle cauliflower with olive oil. Sprinkle with salt and garlic salt (not a whole lot of each, just a few pinches)
Step 3: Cover tightly with foil and bake for 15 minutes. Take out and uncover, then bake again for another 40 minutes. This makes it super tender and kinda crispy.
My kids love it. It really does have a popcorn ish taste to it, but it much healthier for you. We love it. And I will definitely be making this, and variations of it, as often as possible.
